Ingredients

The taco filling

  • 1 lb ground turkey
  • 1 tbsp avocado oil or olive oil
  • 3 pieces bell peppers, diced
  • 1 piece yellow onion, diced
  • 3 tbsp taco seasoning
  • 4 cloves fresh garlic, minced

The taco shells

  • 8-10 pieces small corn tortillas

Taco toppings

  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes, diced
  • 1 cup shredded cheese
  • ½ cup sour cream or plain Greek yogurt
  • optional jalapeños, cilantro, hot sauce, beans

Instructions

  1. Heat oil in a large skillet over medium heat and add diced bell peppers, onions, and garlic; cook until softened.
  2. Move the pepper and onion mixture to the side and add ground turkey and taco seasoning; break apart the turkey and mix with the vegetables.
  3. Continue cooking, stirring regularly, until the turkey is fully cooked through.
  4. Heat corn tortillas in the microwave or a skillet until warm.
  5. Fill tortillas with the taco meat and veggies, then add your favorite toppings and enjoy.
