Sheet Pan Shrimp Primavera

Ingredients

  • 1 lb medium-sized shrimp
  • 2 packages CeCe’s Veggie Co Yellow Squash Noodles
  • 1 pint assorted cherry tomatoes, cut in half
  • 2 Tbsp avocado oil
  • 2 tsp dried, minced garlic
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tsp Italian seasoning
  • ½ lemon squeezed
  • 4-5 leaves fresh basil, torn

Instructions

  1. Preheat the oven to 400°F.
  2. Slice the cherry tomatoes and spread them on one end of a greased sheet pan.
  3. Pat the squash noodles dry and toss them with 1 Tbsp of avocado oil, 1 tsp of dried minced garlic, ½ tsp of salt, ¼ tsp of pepper, and 1 tsp of Italian seasoning.
  4. Place the noodles next to the tomatoes on the sheet pan.
  5. Toss the shrimp with the remaining avocado oil, garlic, salt, pepper, and Italian seasoning, then place them on the sheet pan next to the tomatoes.
  6. Squeeze the lemon over the entire sheet pan.
  7. Bake for 10 minutes or until the shrimp are cooked through.
  8. Serve immediately, making a bed of squash noodles topped with shrimp and tomatoes, and sprinkle with fresh basil if desired.
