Ingredients

The pasta and seafood

  • 8 ounces linguine
  • 1 pound large shrimp, peeled and deveined

The vegetables

  • 1 cup broccoli florets
  • 1 cup frozen peas
  • 1 medium red bell pepper, chopped
  • 2 large carrots, peeled and sliced

The sauce

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • teaspoons dried dill weed
  • 1 teaspoon dried minced onion
  • ¼ teaspoon dried thyme
  • 1 cup heavy cream
  • ¾ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Boil 3 quarts of water in a large pot or Dutch oven and cook the linguine until al dente, about 7 to 10 minutes, adding the shrimp and vegetables during the last 4 minutes.
  2. Drain the pasta and vegetables well.
  3. In the same pot, melt butter and sauté garlic until fragrant.
  4. Add dill, onion, thyme, cream, broth, Parmesan, salt, and pepper, and bring to a boil while whisking constantly.
  5. Reduce heat and simmer for 5 minutes, then add the pasta, shrimp, and vegetables back into the pot and toss to combine.
  6. Serve immediately with additional Parmesan for garnish.
