Citrus Shrimp and Zoodles

Ingredients

  • 12 oz. medium-large shrimp
  • 1 package Veggie Noodle Co. Zoodles (10.7 oz.) or about 4 cups of spiralized zucchini
  • cups assorted cherry tomatoes
  • 1 Tbsp avocado oil
  • 2 tsp dried minced garlic
  • ½ tsp salt
  • ½ tsp ground black pepper
  • tsp Mrs. Dash Original Blend seasoning
  • 1 lemon juiced
  • to taste freshly grated parmesan (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Slice the cherry tomatoes and spread them on one end of a greased sheet pan.
  3. Place zoodles in a bowl, pat dry, and toss with 1 Tbsp avocado oil, 1 tsp dried minced garlic, and ¼ tsp salt, then place next to the tomatoes on the sheet pan.
  4. Toss the shrimp with the remaining avocado oil, dried minced garlic, salt, black pepper, and Mrs. Dash seasoning, then place on the sheet pan.
  5. Squeeze lemon juice over the entire sheet pan.
  6. Bake for 8 minutes or until the shrimp are cooked through.
  7. Serve by making a bed of zoodles topped with shrimp and tomatoes, and sprinkle with parmesan if desired.
