Simple Shrimp Zoodle Salad

Ingredients

The salad

  • 1 medium zucchini
  • 10 oz shrimp peeled & headless (~10 med/large shrimp)
  • 10 pieces grape tomatoes halved
  • 5-10 leaves basil

The dressing and cooking

  • 1 Tbsp ghee
  • ½ Tbsp freshly squeezed lemon juice
  • ½ Tbsp extra virgin olive oil
  • to taste salt & pepper

Instructions

  1. Spiralize the zucchini.
  2. Arrange the zoodles on a plate.
  3. Dry the shrimp and season with salt and pepper.
  4. Melt ghee in a skillet over high heat.
  5. Add the shrimp to the hot pan.
  6. Cook the shrimp for 30-45 seconds on each side until pink.
  7. Remove the shrimp from the pan to cool.
  8. Combine the cooled shrimp, tomatoes, and basil with the zoodles.
  9. Drizzle with lemon juice and olive oil.
  10. Add extra salt and pepper to taste if desired.
