Ingredients

The salad

  • 1 lb zucchini
  • 6 pieces cherry tomatoes
  • grilled shrimp shrimp

The dressing

  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 pinch salt
  • to taste ground black pepper

Instructions

  1. Spiralize the zucchini into noodles and discard any excess water.
  2. In a small bowl, mix olive oil, lemon juice, honey, salt, and black pepper.
  3. Toss the zoodles with the dressing until well combined.
  4. Top the salad with cherry tomatoes and grilled shrimp.
  5. Serve immediately.
