Zucchini Salad

Ingredients

The salad

  • 20 oz Zucchini
  • ½ cup Cherry tomatoes
  • cup Shaved parmesan cheese
  • cup Pine nuts
  • 1 tbsp Fresh parsley
  • 1 tbsp Fresh chives

The dressing

  • ¼ cup Extra virgin olive oil
  • 3 tbsp Lemon juice
  • 1 tbsp Fresh parsley
  • 1 tbsp Fresh chives
  • ½ tsp Garlic powder
  • ¼ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Slice the zucchini into thin ribbons using a mandoline or vegetable peeler.
  2. Whisk together olive oil, lemon juice, parsley, chives, garlic powder, sea salt, and black pepper in a small bowl.
  3. Combine the zucchini ribbons and halved tomatoes in a bowl and pour the dressing over them. Toss gently and marinate for 5 minutes.
  4. Toast the pine nuts in a skillet over medium heat for 3-5 minutes until lightly browned, stirring often.
  5. Plate the salad and top with shaved parmesan, toasted pine nuts, and additional chives and parsley.
