Instructions
- Slice the zucchini into thin ribbons using a mandoline or vegetable peeler.
- Whisk together olive oil, lemon juice, parsley, chives, garlic powder, sea salt, and black pepper in a small bowl.
- Combine the zucchini ribbons and halved tomatoes in a bowl and pour the dressing over them. Toss gently and marinate for 5 minutes.
- Toast the pine nuts in a skillet over medium heat for 3-5 minutes until lightly browned, stirring often.
- Plate the salad and top with shaved parmesan, toasted pine nuts, and additional chives and parsley.
