Ingredients

The dressing

  • cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon coarse kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon dried crushed red pepper

The salad

  • 2 pounds medium zucchini
  • ½ cup coarsely chopped fresh basil
  • ¼ cup pine nuts, toasted
  • 1 wedge Parmesan cheese

Instructions

  1. 1. Whisk together the olive oil, lemon juice, kosher salt, black pepper, and crushed red pepper in a small bowl to create the dressing.
  2. 2. Use a vegetable peeler or V-slicer to slice the zucchini into ribbons and place them in a large bowl.
  3. 3. Add the chopped basil and toasted pine nuts to the zucchini ribbons.
  4. 4. Pour the dressing over the salad and toss to coat. Season with additional salt and pepper to taste.
  5. 5. Shave strips of Parmesan cheese over the top of the salad before serving.
