Shaved Zucchini Salad with Parmesan and Pine Nuts

medium zucchini

Instructions
- 1. Whisk together the olive oil, lemon juice, kosher salt, black pepper, and crushed red pepper in a small bowl to create the dressing.
- 2. Use a vegetable peeler or V-slicer to slice the zucchini into ribbons and place them in a large bowl.
- 3. Add the chopped basil and toasted pine nuts to the zucchini ribbons.
- 4. Pour the dressing over the salad and toss to coat. Season with additional salt and pepper to taste.
- 5. Shave strips of Parmesan cheese over the top of the salad before serving.
