The dressing

Instructions
- Cook the quinoa according to package instructions, preferably in vegetable broth.
- Use a vegetable peeler or spiralizer to create thin strips of zucchini.
- In a large bowl, combine the cooked quinoa, zucchini strips, and halved cherry tomatoes.
- In a separate bowl or jar, mix together the lemon juice, olive oil, crushed red pepper flakes, dill, salt, and pepper until emulsified.
- Toss the salad with the dressing and top with feta cheese before serving.
