Ingredients

The salad

  • 1 ½ cups cooked quinoa
  • 1 pound zucchini
  • 1 cup cherry tomatoes
  • 4 ounces feta or nut cheese

The dressing

  • ¼ cup fresh lemon juice
  • ¼ cup extra virgin olive oil
  • ¼ teaspoon crushed red pepper flakes
  • 1 tablespoon fresh dill or dill essential oil
  • ¾ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper

Instructions

  1. Cook the quinoa according to package instructions, preferably in vegetable broth.
  2. Use a vegetable peeler or spiralizer to create thin strips of zucchini.
  3. In a large bowl, combine the cooked quinoa, zucchini strips, and halved cherry tomatoes.
  4. In a separate bowl or jar, mix together the lemon juice, olive oil, crushed red pepper flakes, dill, salt, and pepper until emulsified.
  5. Toss the salad with the dressing and top with feta cheese before serving.
