Ingredients

The salad

  • 10 oz Spiralized zucchini
  • ¼ cup chopped tomatoes
  • ¼ cup chopped olives
  • cup chopped feta cheese
  • 1 teaspoon basil
  • 1 avocado peeled and sliced

The dressing

  • cup Green Goddess Salad Dressing

The cooking

  • 1 teaspoon olive oil
  • to taste salt and pepper

Instructions

  1. Place the zucchini noodles on paper towels, sprinkle with salt, and let them sweat for at least 30 minutes.
  2. Squeeze out any excess water from the zucchini noodles.
  3. Heat olive oil in a skillet over medium-high heat and sauté the zucchini noodles for 3-4 minutes until soft.
  4. Transfer the cooked zucchini noodles to a large bowl.
  5. Add chopped tomatoes, olives, feta cheese, and basil to the bowl and stir to combine.
  6. Cover and chill the salad in the fridge for at least 1 hour.
  7. Top with sliced avocado just before serving.
