Instructions
- Prepare the dressing by whisking together all dressing ingredients in a glass cup or mason jar.
- Slice the zucchinis lengthwise halfway through, then spiralize them and place in a large bowl.
- Spiralize half of the red onion and add it to the bowl with the zucchini.
- Add the artichokes, olives, chickpeas, baby tomatoes, and feta cheese to the bowl.
- Drizzle the dressing over the salad and gently stir to combine.
- Serve and enjoy.
