Ingredients

The zoodles

  • 10 oz zucchini

The shrimp

  • 1 lb jumbo shrimp, tail-on, peeled and deveined
  • ¼ teaspoon salt
  • 1 pinch cayenne pepper

The sauce

  • 3 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 3 tablespoons chopped cilantro
  • tablespoons lime juice
  • 1 serving fresh lime wedges

Instructions

  1. Prepare the zucchini by cutting off the ends and spiralizing them into noodles.
  2. Place the zoodles in serving bowls.
  3. Season the shrimp with salt and cayenne pepper.
  4. Heat a skillet and melt the butter until it turns brown and bubbly.
  5. Sauté the garlic in the skillet before adding the shrimp.
  6. Cook the shrimp until they turn white on the surface.
  7. Add the cilantro and mix well with the shrimp.
  8. Pour in the lime juice and continue cooking until the shrimp are slightly charred.
  9. Top the zoodles with the shrimp mixture and gently toss to combine.
  10. Garnish with fresh lime wedges and serve immediately.
