Cilantro Lime Shrimp

Ingredients

The shrimp

  • 1 1/4 lbs large shrimp, deveined and peeled
  • 2 Tbsp olive oil
  • 1/3 cup sliced then chopped green onions
  • 3 cloves garlic, minced
  • ¼ tsp ground cumin
  • to taste salt and freshly ground black pepper
  • 2 Tbsp fresh lime juice
  • 1/4 cup finely chopped cilantro
  • 1/2 tsp lime zest

The coconut rice

  • 2 cups Coconut Rice

Instructions

  1. Prepare coconut rice about 25 minutes before making the shrimp as it takes 20 minutes to cook and 5 minutes resting time until it's ready.
  2. Heat olive oil in a skillet over medium-high heat, then add green onions and garlic and sauté until garlic is light golden.
  3. Add shrimp to the skillet, sprinkle with cumin, and season with salt and pepper.
  4. Sauté the shrimp until opaque and cooked through, about 3 minutes.
  5. Remove from heat and toss with lime juice, cilantro, and lime zest.
  6. Serve the shrimp warm over coconut rice.
