Cilantro Lime Baked Shrimp

Ingredients

The shrimp

  • 2 lb. raw shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 lime zest and juice
  • ½ tsp. cumin
  • to taste salt and pepper

The topping

  • 2 Tbsp. melted butter
  • ¼ cup Panko bread crumbs
  • ¼ cup chopped fresh cilantro

Optional garnishes

  • to taste additional lime slices
  • to taste fresh cilantro

Instructions

  1. Preheat the oven to 425°F.
  2. In a medium bowl, combine shrimp, garlic, lime zest and juice, cumin, salt, and pepper.
  3. Transfer the shrimp mixture to a greased baking dish.
  4. In a separate bowl, mix melted butter, Panko, and cilantro.
  5. Sprinkle the Panko mixture evenly over the shrimp.
  6. Bake for 15-18 minutes until the shrimp are pink and opaque.
  7. Garnish with lime wedges and cilantro if desired.
