Ingredients

The shrimp

  • 1 pound medium shrimp, tail on or off, deveined

The marinade

  • ¼ cup gluten free tamari sauce or coconut aminos
  • 2–4 Tablespoons lime juice (1 lime)
  • 2–4 Tablespoons olive or avocado oil
  • 3 Tablespoons honey
  • 1 teaspoon fresh ginger, grated
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 Tablespoon cilantro, finely chopped

Garnishes

  • to taste fresh cilantro
  • to taste lime
  • optional red chili pepper flakes

Instructions

  1. Preheat the oven to 400° F.
  2. Clean and devein the shrimp, and place them in a baking dish.
  3. In a small bowl, combine tamari sauce, lime juice, oil, honey, ginger, black pepper, and salt. Stir in cilantro.
  4. Drizzle or brush the marinade over the shrimp.
  5. Roast the shrimp for 10-12 minutes until they turn opaque and pink.
  6. Cover the shrimp with foil for the first 8 minutes, then uncover for the remaining time.
  7. Optional: Garnish with chili pepper flakes, a splash of lime, and fresh cilantro.
  8. Peel off shrimp tails before eating.
