Pan Fried Rainbow Trout

fresh lemon juice

fresh dill

capers (optional)
Instructions
- Rinse the fillets in cold water and pat dry with paper towels.
- Combine flour, salt, and black pepper in a small bowl.
- Coat both sides of the trout filets with the seasoned flour mixture.
- Heat a large frying pan over medium-high heat and add olive oil and half of the butter.
- Once the butter has melted, add the chopped garlic and cook until fragrant.
- Place the trout in the pan, skin side down, and cook for 2-3 minutes.
- Carefully turn the trout and cook for another 2-3 minutes.
- Remove the trout from the pan and drain on paper towels.
- Add the remaining butter to the pan and scrape up the browned bits.
- Add capers, lemon juice, and dill, cooking for two minutes before removing from heat.
- Top the fish with the butter caper sauce and serve.
