Pan Fried Rainbow Trout

Ingredients

The fish

  • 12-14 ounces rainbow trout filets

The cooking fat and seasonings

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 teaspoons chopped garlic
  • 2 tablespoons flour
  • ½ teaspoon table salt
  • ½ teaspoon black pepper
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon fresh dill
  • 1-2 tablespoons capers (optional)

Instructions

  1. Rinse the fillets in cold water and pat dry with paper towels.
  2. Combine flour, salt, and black pepper in a small bowl.
  3. Coat both sides of the trout filets with the seasoned flour mixture.
  4. Heat a large frying pan over medium-high heat and add olive oil and half of the butter.
  5. Once the butter has melted, add the chopped garlic and cook until fragrant.
  6. Place the trout in the pan, skin side down, and cook for 2-3 minutes.
  7. Carefully turn the trout and cook for another 2-3 minutes.
  8. Remove the trout from the pan and drain on paper towels.
  9. Add the remaining butter to the pan and scrape up the browned bits.
  10. Add capers, lemon juice, and dill, cooking for two minutes before removing from heat.
  11. Top the fish with the butter caper sauce and serve.
