Ingredients

The fish

  • 4 fillets rainbow trout

The seasoning

  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons lemon juice

The cooking fats

  • 1 tablespoon olive oil
  • 3 tablespoons butter

The aromatics

  • 5 cloves garlic

Instructions

  1. Pat dry the trout fillets and season with salt and pepper.
  2. Rub lemon juice on both sides of the fillets.
  3. Heat olive oil in a non-stick skillet or grill over medium heat.
  4. Place the trout fillets flesh side down in the pan and sear for 3-4 minutes until crispy.
  5. Flip the fillets and cook for an additional 2 minutes.
  6. Add butter, garlic, and parsley, stirring around the fillets.
  7. Remove from heat and drizzle with extra butter and more parsley before serving.
