Ingredients

The fish

  • 1 whole trout

The stuffing

  • to taste salt
  • to taste pepper
  • a handful fresh herbs (thyme, oregano, dill, rosemary, marjoram, fennel)
  • 1-2 slices lemon, lime, or orange
  • 2-3 cloves garlic
  • 1-2 slices onion (optional)
  • to taste dried chilis (optional)

For grilling

  • to taste olive oil (optional)

Instructions

  1. Preheat the grill to medium heat (350F-375F).
  2. Sprinkle salt and pepper inside the cavity of the trout.
  3. Stuff the trout with fresh herbs and optional aromatics like lemon, garlic, and onion.
  4. Season the outside of the trout with more salt and pepper.
  5. Optionally brush the skin with olive oil.
  6. Place the trout on the grill and close the lid.
  7. Cook until the skin is crispy and the flesh turns opaque, about 5-10 minutes per side depending on thickness.
  8. Carefully flip the trout when ready and continue cooking until fully cooked through.
  9. Transfer the grilled trout to a serving plate and serve.
