Spicy Baked Trout with Herbs

Ingredients

The fish

  • 2 fillets trout

The seasoning

  • 1–2 teaspoons sweet chili pepper
  • ½ teaspoon mustard powder or cumin
  • 1 teaspoon dry onion or garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper

The oil and garnish

  • 1–2 teaspoons olive oil
  • 1 slice lemon
  • 1–2 leaves sage (fresh, chopped)

Instructions

  1. Mix the dry ingredients in a bowl and transfer to a plate.
  2. Coat each trout fillet in olive oil or melted butter, then coat with the dry mix.
  3. Squeeze fresh lemon juice on top of the fillets.
  4. Preheat the oven to 400°F.
  5. Place the fillets skin side down on a foiled pan and bake for 8-10 minutes until flaky and opaque.
  6. Garnish with chopped sage or additional spices as desired.
