Brown Spinach Rice

Instructions
- Blend spinach and parsley in a food processor and set aside.
- Wash the rice until the water runs clear and drain.
- Heat oil in a saucepan, then sauté onions, garlic, paprika, and curry for about a minute.
- Add rice to the pan and stir for about 2 minutes.
- Pour in the stock or water, bring to a boil, then reduce heat and simmer for 15-18 minutes until rice is almost cooked.
- Stir in the spinach and parsley mixture, combine thoroughly, and continue cooking until the rice is fully cooked, adding more stock if needed.
- Adjust salt and pepper to taste, then serve warm.
