Brown Spinach Rice

Ingredients

The rice

  • 2 cups brown rice
  • 4 cups chicken stock or water

The vegetables and herbs

  • 1 medium onion, chopped
  • 1-2 teaspoons minced garlic
  • ¼ cup fresh parsley, chopped
  • 6-8 cups fresh spinach

The spices

  • 2-3 tablespoons cooking oil
  • ½ teaspoon smoked paprika
  • ¼ teaspoon curry powder (optional)
  • 1 ½ teaspoons salt (or more to taste)
  • to taste black pepper

Instructions

  1. Blend spinach and parsley in a food processor and set aside.
  2. Wash the rice until the water runs clear and drain.
  3. Heat oil in a saucepan, then sauté onions, garlic, paprika, and curry for about a minute.
  4. Add rice to the pan and stir for about 2 minutes.
  5. Pour in the stock or water, bring to a boil, then reduce heat and simmer for 15-18 minutes until rice is almost cooked.
  6. Stir in the spinach and parsley mixture, combine thoroughly, and continue cooking until the rice is fully cooked, adding more stock if needed.
  7. Adjust salt and pepper to taste, then serve warm.
