Spinach Rice with Feta

Ingredients

  • ½ lb frozen chopped spinach
  • 2 cloves garlic, minced
  • 2 Tbsp butter
  • 1.5 cups long grain white rice
  • ¾ tsp salt
  • 2.5 cups water
  • 1 Tbsp lemon juice
  • 2 oz feta, crumbled

Instructions

  1. Thaw the spinach and squeeze out excess moisture.
  2. Sauté minced garlic in butter over medium heat for 1-2 minutes.
  3. Add spinach, rice, salt, lemon juice, and water to the pot and stir briefly.
  4. Cover the pot, bring to a boil, then reduce heat to low and simmer for 15 minutes.
  5. Remove from heat and let rest for 5 minutes without removing the lid.
  6. Fluff the rice with a fork, folding in the spinach.
  7. Sprinkle feta over the rice and fold to combine before serving.
