Spinach, Feta, & Brown Rice Pie

Ingredients

  • 4 pieces eggs
  • ½ cup egg whites
  • ¼ cup low fat milk
  • 1 tbsp extra virgin olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 2 cups cooked brown rice
  • 1 cup Feta cheese, crumbled
  • ½ tsp sea salt
  • ¼ tsp black pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Coat a 9-inch pie plate with cooking spray or olive oil.
  3. In a medium bowl, beat together the eggs, egg whites, milk, salt, and pepper.
  4. Heat olive oil in a large non-stick skillet over medium-high heat.
  5. Add the onion and cook until translucent, about 5 minutes.
  6. Stir in the garlic and spinach, cooking for an additional couple of minutes.
  7. Transfer the vegetable mixture to a large bowl and stir in the brown rice and Feta cheese.
  8. Pour the egg mixture over the vegetable and rice mixture, then transfer everything into the pie pan.
  9. Smooth out the top with a spatula.
  10. Bake for about 25 minutes or until lightly browned.
  11. Cool for a few minutes before cutting and serving.
