Spinach, Feta, & Brown Rice Pie

Instructions
- Preheat the oven to 425°F.
- Coat a 9-inch pie plate with cooking spray or olive oil.
- In a medium bowl, beat together the eggs, egg whites, milk, salt, and pepper.
- Heat olive oil in a large non-stick skillet over medium-high heat.
- Add the onion and cook until translucent, about 5 minutes.
- Stir in the garlic and spinach, cooking for an additional couple of minutes.
- Transfer the vegetable mixture to a large bowl and stir in the brown rice and Feta cheese.
- Pour the egg mixture over the vegetable and rice mixture, then transfer everything into the pie pan.
- Smooth out the top with a spatula.
- Bake for about 25 minutes or until lightly browned.
- Cool for a few minutes before cutting and serving.
