Ingredients

The filling

  • 3 large eggs
  • 5 cups fresh spinach
  • ½ avocado sliced
  • 4 tortillas charred or warmed
  • Roasted Tomatillo Salsa for serving
  • microgreens (optional)
  • sliced serrano peppers (optional)
  • lime wedges (if desired, for serving)

The seasoning

  • sea salt
  • freshly ground black pepper
  • Extra-virgin olive oil for brushing

Instructions

  1. Brush a skillet with olive oil and heat it to medium.
  2. Add spinach with salt and pepper, sauté until wilted.
  3. Wipe the skillet clean and scramble the eggs in it.
  4. Assemble the tacos with eggs, spinach, avocado, and tomatillo salsa.
  5. Top with microgreens and sliced serranos, serve with lime wedges if desired.
