Simple Blueberry Cake

Ingredients

  • 1 ¾ cups white whole wheat flour or regular whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground cinnamon
  • ½ cup maple syrup or honey
  • 6 tablespoons melted butter
  • 2 large eggs
  • cup buttermilk
  • 2 teaspoons vanilla extract
  • 3 cups blueberries, fresh or frozen
  • 1 tablespoon turbinado sugar

Instructions

  1. Preheat the oven to 400°F and prepare a 9-inch springform pan.
  2. Mix the dry ingredients in a large bowl.
  3. In another bowl, whisk together the wet ingredients.
  4. Combine the wet and dry ingredients until just mixed.
  5. Toss 2 cups of blueberries with a teaspoon of flour and fold them into the batter.
  6. Pour the batter into the pan and top with the remaining blueberries and turbinado sugar.
  7. Bake for 34 to 38 minutes until golden and a toothpick comes out clean.
  8. Let the cake cool before serving.
