Blueberry Butter Cake

Ingredients

  • 2 sticks unsalted butter, at room temperature
  • 7 oz all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 7 oz sugar
  • 4 large eggs
  • 4 tablespoons fresh milk
  • 1 teaspoon vanilla essence
  • 6 oz fresh blueberries
  • to taste powdered sugar, for dusting (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease the baking pan with butter.
  3. Mix the flour and baking powder, then sieve and add salt.
  4. Beat the butter and sugar until pale yellow.
  5. Add eggs one at a time, beating well after each addition.
  6. Mix in vanilla essence.
  7. Fold in the flour mixture and then add the milk.
  8. Pour the batter into the greased pan and smooth the top.
  9. Add blueberries on top in a single layer.
  10. Bake for 40-50 minutes until golden brown and cooked through.
  11. Cool on a wire rack for 10 minutes and dust with powdered sugar if desired.
