Zuppa Toscana Soup

Ingredients

  • 1 tbsp Olive oil
  • 1 lb Ground Italian sausage
  • 1 large Onion (diced)
  • 6 cloves Garlic (minced)
  • 5 medium Potatoes (peeled and diced; ~4 cups)
  • 5 strips Cooked bacon (crumbled or chopped)
  • 5 cups Chicken broth (reduced sodium)
  • 1 cup Heavy cream
  • 4 cups Kale (de-stemmed and chopped)
  • ½ tsp Sea salt (to taste)
  • ¼ tsp Black pepper (to taste)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat, add sausage and onions, and sauté until browned.
  2. Stir in garlic and sauté for about 1 minute until fragrant.
  3. Add potatoes, cooked bacon, and chicken broth, bringing the mixture to a boil.
  4. Reduce heat to a simmer and cook until potatoes are tender, about 10-15 minutes.
  5. Stir in heavy cream and kale, cooking until the kale is wilted.
  6. Season with salt and pepper to taste, and serve topped with more bacon if desired.
