Instructions
- Heat olive oil in a Dutch oven over medium-high heat, add sausage and onions, and sauté until browned.
- Stir in garlic and sauté for about 1 minute until fragrant.
- Add potatoes, cooked bacon, and chicken broth, bringing the mixture to a boil.
- Reduce heat to a simmer and cook until potatoes are tender, about 10-15 minutes.
- Stir in heavy cream and kale, cooking until the kale is wilted.
- Season with salt and pepper to taste, and serve topped with more bacon if desired.
