Ingredients

Base Ingredients

  • 12 pieces eggs
  • ¼ cup heavy cream
  • ½ teaspoon fine grain sea salt
  • ¼ teaspoon freshly ground pepper
  • 2 pieces lemons (zest)
  • 1 tablespoon olive oil

Add-ins

  • ¾ cup well-chopped kale
  • 4 pieces scallions (sliced)

For Serving

  • to taste toasted nuts
  • to taste chives
  • to taste crushed potato chips
  • to taste grated cheese

Instructions

  1. Preheat the oven to 325°F (160°C) with racks in the top and bottom thirds.
  2. Rub a quarter sheet pan with olive oil and line it with parchment paper, smoothing out any bubbles.
  3. Sprinkle the zest of one lemon across the pan.
  4. In a large bowl, whisk together the eggs, cream, salt, pepper, and the zest of the other lemon.
  5. Stir in the kale and scallions, then pour the mixture into the prepared sheet pan.
  6. Bake for 25-30 minutes until the eggs are puffy and set.
  7. Remove from the oven and serve with desired toppings.
