Instructions
- Preheat the oven to 325°F (160°C) with racks in the top and bottom thirds.
- Rub a quarter sheet pan with olive oil and line it with parchment paper, smoothing out any bubbles.
- Sprinkle the zest of one lemon across the pan.
- In a large bowl, whisk together the eggs, cream, salt, pepper, and the zest of the other lemon.
- Stir in the kale and scallions, then pour the mixture into the prepared sheet pan.
- Bake for 25-30 minutes until the eggs are puffy and set.
- Remove from the oven and serve with desired toppings.
