Monggo Beans (or Mung Bean Soup)

Ingredients

  • 2 cups dry monggo beans or mung beans or green lentils
  • 6 cups vegetable broth
  • 1 tablespoon oil
  • 1 unit onion, minced
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 cup coconut milk
  • 1 bunch chopped or pulled malunggay leaves or spinach
  • to taste salt

Instructions

  1. Bring the vegetable broth to a boil in a large pot and add the rinsed monggo beans, cooking uncovered for about 40 minutes.
  2. In a separate skillet, heat oil and sauté the minced onion, garlic, and ginger until soft and fragrant, about 3 minutes.
  3. Combine the sautéed mixture with the monggo beans and let it simmer together for a few minutes.
  4. Stir in the coconut milk and malunggay leaves, then remove from heat.
  5. Serve over rice or enjoy as a soup.
