Instructions
- Bring the vegetable broth to a boil in a large pot and add the rinsed monggo beans, cooking uncovered for about 40 minutes.
- In a separate skillet, heat oil and sauté the minced onion, garlic, and ginger until soft and fragrant, about 3 minutes.
- Combine the sautéed mixture with the monggo beans and let it simmer together for a few minutes.
- Stir in the coconut milk and malunggay leaves, then remove from heat.
- Serve over rice or enjoy as a soup.
