Ingredients

  • cup skinless black-eyed peas
  • ¼ – ½ cup onion
  • 2 cups water
  • 1 small red bell pepper
  • 1 cube Maggie cube
  • 1 teaspoon bouillon
  • 1-2 teaspoons salt
  • 1-2 tablespoons palm oil
  • ¼ cup vegetable oil
  • 6-8 oz baked salmon or any boneless fish
  • 3 pieces boiled eggs
  • ½ pepper habanero pepper (optional)

Instructions

  1. Soak the beans in water for 1 hour to overnight.
  2. Preheat the oven to 350°F and prepare baking cups.
  3. Chop the onions, bell pepper, and habanero.
  4. Blend the onions, beans, bell pepper, and habanero with water until smooth.
  5. Mix the blended mixture with baked salmon and oils, then season with Maggie and salt.
  6. Pour the mixture into prepared cups and add pieces of boiled eggs.
  7. Place the cups in a baking pan and add hot water halfway up the sides.
  8. Cover with foil and bake for 1 to 1½ hours.
  9. Let rest for 10 minutes before serving.
