Ingredients

The pastry

  • 1 sheet frozen puff pastry, defrosted

The toppings

  • 2 teaspoons olive oil
  • 1 clove garlic, minced
  • ¾ cup shredded 2% Mozzarella cheese
  • 1 tablespoon thinly sliced fresh basil leaves
  • 1.5 oz sliced or diced tomatoes

Instructions

  1. Roll out the defrosted puff pastry on a floured surface into a 10"x14" rectangle and chill.
  2. Heat olive oil in a skillet and cook the minced garlic for about a minute, then remove to cool.
  3. Cut the rolled pastry into 12 equal pieces and place them on a parchment-lined baking sheet.
  4. Brush the garlic oil on each pastry piece, add a tablespoon of Mozzarella, basil, and tomato slices, leaving edges clear.
  5. Chill the baking sheet in the refrigerator for about 10 minutes.
  6. Preheat the oven to 400°F and bake the tarts for 15-20 minutes until golden and cheese is melted.
