Ingredients

The tart shell

  • ½ batch My Favorite Buttermilk Pie Crust

The filling

  • 4 tablespoons pizza sauce
  • ½ cup shredded mozzarella
  • 12 slices good-quality pepperoni
  • 2 tablespoons shredded Parmesan cheese
  • 4 small basil leaves

Instructions

  1. Preheat the oven to 400°F.
  2. Divide the dough into 4 pieces and roll each out on a floured surface.
  3. Fit the rolled dough into mini tart pans, trimming the excess.
  4. Optionally, blind bake the shells for 10 minutes with weights, then bake for an additional 2-3 minutes.
  5. Spread 1 tablespoon of pizza sauce in each tart shell.
  6. Add 2 tablespoons of mozzarella, 3 slices of pepperoni, and sprinkle with Parmesan cheese.
  7. Bake for 15-20 minutes until the cheese is bubbly and the crust is golden.
  8. Cool for at least 5 minutes before serving, and sprinkle with fresh basil if desired.
