Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Combine oats, almonds, and pepitas on the baking sheet.
- Melt coconut oil and maple syrup (or honey) in a saucepan, then stir in vanilla, mashed banana, and lemon zest.
- Pour the mixture over the oat mix, toss well, and sprinkle with salt. Stir in blueberries.
- Bake for 25-30 minutes, stirring 1-2 times until golden brown. Allow to cool completely.
- To serve, spoon yogurt into a bowl and top with granola, fresh fruit, avocado, seeds, and nuts. Drizzle with honey or maple syrup.
