Ingredients

The granola cups

  • 2 cups old-fashioned oats
  • ½ cup wheat germ
  • ¼ cup sliced almonds
  • ¼ cup dried cranberries
  • 2 tablespoons light butter
  • ¼ cup honey
  • ¼ cup molasses
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

The filling

  • 2 ¼ cups fat free vanilla yogurt
  • to taste assorted berries for topping

Instructions

  1. Combine oats, wheat germ, almonds, and cranberries in a large bowl and set aside.
  2. In a small skillet, melt butter and mix in honey, molasses, brown sugar, cinnamon, ginger, cloves, and salt over medium heat until combined, then remove from heat and stir in vanilla.
  3. Pour the molasses mixture over the oat mixture and stir until coated, then chill in the refrigerator for 30 minutes.
  4. Preheat the oven to 325°F and lightly mist a muffin tin with cooking spray.
  5. Divide the granola mixture among the muffin cups, pressing it down to form cups.
  6. Bake for 15-17 minutes, then allow to cool completely before removing from the tin.
  7. Once cooled, fill each cup with yogurt and top with berries.
