Ingredients

The granola cups

  • ¼ cup honey, warmed
  • ¼ cup coconut oil, melted and hot
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups old-fashioned oats
  • 1 cup finely-chopped nuts (such as pecans, walnuts, or almonds)
  • ½ cup shredded coconut (sweetened or unsweetened)
  • 2 teaspoons chia seeds (optional)

The fillings

  • to taste Greek yogurt
  • to taste fresh fruit
  • to taste chia seeds

Instructions

  1. Preheat the oven to 325°F and mist 8 mini tart pans with cooking spray.
  2. In a small bowl, whisk together the warmed honey, coconut oil, cinnamon, vanilla extract, and salt until combined.
  3. In a large bowl, mix together oats, nuts, coconut, and chia seeds until evenly combined. Add the honey mixture and toss until coated.
  4. Divide the granola mixture evenly among the mini tart pans, pressing it firmly into the bottoms and sides.
  5. Place the pans on a baking tray and bake for 20-25 minutes until browned and toasted.
  6. Cool the tart pans on a wire rack until they reach room temperature, then gently remove the granola tarts.
  7. Fill with your desired fillings and serve immediately, or store in an airtight bag for up to 7 days.
