Mini Granola Tart Cups

Instructions
- Preheat the oven to 325°F and mist 8 mini tart pans with cooking spray.
- In a small bowl, whisk together the warmed honey, coconut oil, cinnamon, vanilla extract, and salt until combined.
- In a large bowl, mix together oats, nuts, coconut, and chia seeds until evenly combined. Add the honey mixture and toss until coated.
- Divide the granola mixture evenly among the mini tart pans, pressing it firmly into the bottoms and sides.
- Place the pans on a baking tray and bake for 20-25 minutes until browned and toasted.
- Cool the tart pans on a wire rack until they reach room temperature, then gently remove the granola tarts.
- Fill with your desired fillings and serve immediately, or store in an airtight bag for up to 7 days.
