Ingredients

  • 1 2/3 cups cake flour
  • 1 cup white whole-wheat flour
  • 2 ¼ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 4 large eggs (separated)
  • 1 ½ teaspoons pure vanilla extract
  • 2 sticks butter (at room temp)
  • 1 ¼ cups sugar (+ 1 tablespoon, divided)

Instructions

  1. 1. Line a cupcake pan with 20 paper liners and preheat the oven to 350°F.
  2. 2. In a medium bowl, whisk together the flours, baking powder, and salt.
  3. 3. In another bowl, combine the milk, egg yolks, and vanilla.
  4. 4. In a large mixing bowl, beat the butter and 1 1/4 cups sugar until creamy, then add the flour and milk mixtures alternately while mixing.
  5. 5. In a separate bowl, whip the egg whites with 1 tablespoon sugar until fluffy, then gently fold into the batter.
  6. 6. Divide the batter into the cupcake liners and bake for 22 to 24 minutes until a toothpick comes out clean.
  7. 7. Let cool completely before frosting.
