Ingredients

Pizza Base

  • 1 pie Grandma-Style Pizza Dough

Toppings

  • 12 ounces fresh mozzarella, grated
  • 1 cup Fresh Tomato Pizza Sauce
  • 2 ounces thinly sliced hot soppressata
  • 2 ounces thinly sliced sweet soppressata
  • ½ fennel bulb thinly sliced
  • 2–3 pieces fresh red chiles, thinly sliced
  • 2 ounces Pecorino Romano, finely grated
  • ¼ cup olive oil

Optional Garnishes

  • to taste coarsely chopped fennel fronds
  • to taste flaky sea salt
  • to taste crushed red pepper flakes

Instructions

  1. Preheat the oven to 525° or the highest setting.
  2. Once the dough has risen, top it with mozzarella, tomato sauce, hot and sweet soppressata, fennel, chiles, and Pecorino; drizzle with olive oil.
  3. Bake until the pie is golden brown and crisp, about 20–30 minutes.
  4. Serve topped with fennel fronds, sea salt, and red pepper flakes if desired.
