Instructions
- Preheat the oven to 525° or the highest setting.
- Once the dough has risen, top it with mozzarella, tomato sauce, hot and sweet soppressata, fennel, chiles, and Pecorino; drizzle with olive oil.
- Bake until the pie is golden brown and crisp, about 20–30 minutes.
- Serve topped with fennel fronds, sea salt, and red pepper flakes if desired.
