Instructions
- Preheat the oven to 525° or as high as it will go, placing a rack in the lower third.
- Once the dough has risen on the baking sheet, top it with mozzarella and provolone.
- Dot the pie with tomato sauce, then add the onion and olives.
- Bake the pie until it is golden brown and crisp on the bottom and sides, about 20–30 minutes.
