Ingredients

Dough and Cheese

  • 12 ounces fresh mozzarella, grated
  • 4 ounces sharp provolone cheese, grated

Toppings

  • cups Fresh Tomato Pizza Sauce
  • ¼ medium red onion, thinly sliced
  • ½ cup Sicilian oil-cured black olives, pitted, coarsely chopped
  • to taste Crushed red pepper flakes (for serving; optional)

Instructions

  1. Preheat the oven to 525° or as high as it will go, placing a rack in the lower third.
  2. Once the dough has risen on the baking sheet, top it with mozzarella and provolone.
  3. Dot the pie with tomato sauce, then add the onion and olives.
  4. Bake the pie until it is golden brown and crisp on the bottom and sides, about 20–30 minutes.
