Ingredients

Wet Ingredients

  • 1 cup whole wheat or whole wheat pastry flour

  • 2 teaspoon baking powder
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried thyme

Add-ins

  • 1 cup shredded zucchini
  • ½ cup freshly shredded Parmesan cheese
  • ½ cup shredded mild or sharp cheddar cheese

Instructions

  1. Preheat the oven to 375°F and coat a loaf pan with cooking spray.
  2. In a bowl, whisk together the olive oil, melted butter, milk, and eggs until combined.
  3. In another bowl, mix the flours, baking powder, salt, black pepper, onion powder, garlic powder, and thyme until combined.
  4. Combine the wet and dry ingredients, stirring until just mixed, then fold in the zucchini and cheeses.
  5. Pour the mixture into the prepared loaf pan and bake for 25-35 minutes, or until a toothpick comes out clean.
