Ingredients

The scones

  • 3 ½ cups all-purpose flour
  • 3 tablespoons sugar
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • ¾ cup cold unsalted butter
  • 1 ¼ cups buttermilk
  • to taste jam of choice

Egg wash

  • 1 large egg
  • 1 tablespoon water

The glaze

  • 1 cup powdered sugar
  • 1 tablespoon unsalted butter
  • 1 to 3 tablespoons milk
  • ¼ teaspoon vanilla extract
  • teaspoon salt

Instructions

  1. Preheat the oven to 400°F and prepare a baking tray with parchment paper.
  2. In a food processor, mix flour, sugar, baking powder, and salt. Add butter and pulse until the mixture resembles coarse crumbs.
  3. Add buttermilk and pulse until the dough begins to clump together.
  4. Transfer the dough to a floured surface, pat it down to about ¾-inch thick, and cut out rounds using a biscuit cutter.
  5. Place the scones on the baking tray and create a well in the center of each for the jam.
  6. Fill the wells with jam, being careful not to overfill.
  7. Whisk together the egg and water, then brush the mixture over the scones.
  8. Bake for 14 to 16 minutes until lightly golden.
  9. In a bowl, whisk together the ingredients for the glaze until smooth, adjusting the milk for desired consistency.
  10. Brush or drizzle the glaze over the warm scones.
