Corn Salsa

grilled corn or 1 ½ cups frozen corn that has been thawed

Instructions
- Grill the corn in its husk on a hot grill for 15-20 minutes, turning occasionally.
- Remove the husks and silk from the corn and let it cool.
- Cut the kernels from the cooled corn cobs or thaw and rinse the frozen corn.
- In a medium bowl, combine the corn, black beans, tomato, red onion, jalapeño, and cilantro.
- Drizzle the mixture with lime juice, canola oil, cumin, and salt, then toss to coat.
- Serve with chips, tacos, or as a topping for chicken or steak.
