Ingredients

  • 2 cobs grilled corn or 1 ½ cups frozen corn that has been thawed
  • 1 cup canned black beans, rinsed and drained
  • cup chopped tomato
  • cup chopped red onion
  • 2 tablespoons minced jalapeño
  • 2 tablespoons chopped cilantro
  • 3 tablespoons fresh lime juice
  • 1 tablespoon canola oil
  • 1 teaspoon kosher salt
  • ½ teaspoon ground cumin

Instructions

  1. Grill the corn in its husk on a hot grill for 15-20 minutes, turning occasionally.
  2. Remove the husks and silk from the corn and let it cool.
  3. Cut the kernels from the cooled corn cobs or thaw and rinse the frozen corn.
  4. In a medium bowl, combine the corn, black beans, tomato, red onion, jalapeño, and cilantro.
  5. Drizzle the mixture with lime juice, canola oil, cumin, and salt, then toss to coat.
  6. Serve with chips, tacos, or as a topping for chicken or steak.
