Instructions
- Make the sauce by combining hoisin sauce, soy sauce, rice vinegar, toasted sesame oil, fresh grated ginger, and minced garlic in a small bowl.
- Chop the red bell pepper and water chestnuts into similar-sized pieces, and slice the green onions and chop the peanuts.
- Heat cooking oil in a skillet over medium heat, add ground chicken, crumble it, and cook until browned.
- Add the red bell pepper and water chestnuts to the skillet and sauté for two minutes.
- Pour the prepared sauce into the skillet and mix well, cooking for an additional two minutes.
- Remove from heat and top with green onions and chopped peanuts.
- Make the peanut lime dressing by mixing peanut butter, brown sugar, minced garlic, grated ginger, lime juice, soy sauce, and neutral oil in a small bowl.
- Serve the chicken and vegetable mixture inside lettuce leaves and drizzle with peanut lime dressing.
