Ingredients

The filling

  • 1 lb ground chicken
  • 1 red bell pepper diced
  • 8 oz canned water chestnuts, drained
  • 2 green onions sliced
  • ¼ cup peanuts, chopped
  • 12 leaves lettuce

The sauce

  • ¼ cup hoisin sauce
  • 2 Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 1 Tbsp toasted sesame oil
  • 1 Tbsp fresh grated ginger
  • 2 cloves garlic, minced
  • 1 Tbsp cooking oil

Peanut Lime Dressing

  • Tbsp natural style peanut butter
  • ½ Tbsp brown sugar
  • 1 clove garlic, minced
  • ¼ tsp fresh grated ginger
  • 1 medium lime, juiced
  • 1 tsp soy sauce
  • 2 Tbsp neutral oil

Instructions

  1. Make the sauce by combining hoisin sauce, soy sauce, rice vinegar, toasted sesame oil, fresh grated ginger, and minced garlic in a small bowl.
  2. Chop the red bell pepper and water chestnuts into similar-sized pieces, and slice the green onions and chop the peanuts.
  3. Heat cooking oil in a skillet over medium heat, add ground chicken, crumble it, and cook until browned.
  4. Add the red bell pepper and water chestnuts to the skillet and sauté for two minutes.
  5. Pour the prepared sauce into the skillet and mix well, cooking for an additional two minutes.
  6. Remove from heat and top with green onions and chopped peanuts.
  7. Make the peanut lime dressing by mixing peanut butter, brown sugar, minced garlic, grated ginger, lime juice, soy sauce, and neutral oil in a small bowl.
  8. Serve the chicken and vegetable mixture inside lettuce leaves and drizzle with peanut lime dressing.
