Thai Chicken Lettuce Wraps

Ingredients

The Chicken Filling

  • 2 tablespoons olive oil
  • 1 lb. ground chicken
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • ¼ teaspoon ground cloves
  • ¼ teaspoon sea salt

The Spicy Peanut Sauce

  • 4 tablespoons peanut butter
  • 3 tablespoons coconut aminos or tamari
  • 2 tablespoons fresh cilantro, diced
  • 1 tablespoon raw honey
  • juice of 1 lime
  • 1 teaspoon fresh ginger, minced
  • 1 clove garlic, minced
  • ½ teaspoon red pepper flakes

For the Lettuce Wraps

  • 2 carrots cut into 1” long matchsticks
  • ½ cucumber cut into 1” long matchsticks
  • 6 mini red bell peppers, sliced
  • ¼ cup green onions, sliced
  • ¼ cup fresh cilantro, diced
  • 1 head butter or Boston lettuce, torn into cups
  • optional sriracha sauce for topping

Instructions

  1. Make the Spicy Peanut Sauce by mixing all sauce ingredients in a bowl until smooth and set aside.
  2. Heat a skillet over medium-high heat and add olive oil, garlic, and ginger. Sauté for 30 seconds.
  3. Add ground chicken to the skillet and cook until no longer pink, about 6-8 minutes. Stir in ground cloves and sea salt.
  4. Assemble the lettuce wraps by placing ¼ cup of chicken mixture in a lettuce cup, adding cucumbers, carrots, and red pepper slices.
  5. Top with 1 tablespoon of Spicy Peanut Sauce and garnish with green onions and cilantro.
