Ingredients

The salad

  • 1 lb. boneless skinless chicken breasts
  • 1 small head green cabbage
  • 2 each yellow bell peppers
  • 2 each red bell peppers
  • 2 large carrots
  • 1 cup green onions
  • to taste cilantro

The peanut sauce

  • ¼ cup fresh lime juice
  • 4 teaspoons fish sauce
  • 4 teaspoons low sodium soy sauce
  • 4 teaspoons canola oil
  • 3 teaspoons sugar
  • 2 teaspoons honey
  • 2 teaspoons water
  • 1 cup peanuts
  • 8 small cloves garlic
  • tablespoons lemongrass paste

Instructions

  1. Boil water in a large pot and cook the chicken breasts for about 20 minutes until done, then shred and chill.
  2. Prepare the cabbage by cutting off the bottom stem and washing the leaves.
  3. Chop the other vegetables.
  4. Blend the peanut sauce ingredients until smooth and adjust to taste.
  5. Assemble the wraps by filling cabbage leaves with chicken, vegetables, and peanut sauce.
