Healthy Chicken Lettuce Wraps

Ingredients

The filling

  • 1 lb ground chicken
  • 1 small yellow onion, diced
  • 1 tbsp olive oil
  • 2 cloves minced garlic
  • 1 tbsp ginger paste or fresh ginger
  • 2 tsp sesame oil
  • 1 tbsp sriracha
  • 2 tbsp rice vinegar
  • ¼ cup low sodium soy sauce
  • 3 tbsp honey
  • ¼ cup chopped green onion
  • ½ cup diced water chestnuts

The wraps

  • 1 large head butter lettuce

Toppings

  • to taste peanuts
  • to taste sriracha
  • to taste green onion

Instructions

  1. Heat olive oil in a large saucepan and sauté onion until mostly cooked.
  2. Add minced garlic and ginger, cooking for one more minute before adding ground chicken.
  3. Cook the chicken until almost done, then prepare the sauce in a separate bowl.
  4. Whisk together sesame oil, sriracha, rice vinegar, soy sauce, and honey.
  5. Add the sauce to the chicken and reduce heat to let it simmer.
  6. Stir in diced green onion and water chestnuts, allowing the sauce to thicken for about 5 minutes.
  7. Remove from heat and wash/dry butter lettuce leaves.
  8. Scoop about ⅓ cup of chicken mixture onto each lettuce leaf and add desired toppings.
