Healthy Chicken Lettuce Wraps

Instructions
- Heat olive oil in a large saucepan and sauté onion until mostly cooked.
- Add minced garlic and ginger, cooking for one more minute before adding ground chicken.
- Cook the chicken until almost done, then prepare the sauce in a separate bowl.
- Whisk together sesame oil, sriracha, rice vinegar, soy sauce, and honey.
- Add the sauce to the chicken and reduce heat to let it simmer.
- Stir in diced green onion and water chestnuts, allowing the sauce to thicken for about 5 minutes.
- Remove from heat and wash/dry butter lettuce leaves.
- Scoop about ⅓ cup of chicken mixture onto each lettuce leaf and add desired toppings.
