Cashew Chicken Lettuce Wraps

Instructions
- Whisk together the cashew sauce ingredients in a medium bowl and set aside.
- Heat oil in a large skillet over medium-high heat.
- Add ground chicken and cook for 2-3 minutes.
- Stir in coleslaw mix and cook for 5-6 minutes until the cabbage is wilted and chicken is fully cooked.
- Season with salt and pepper, then stir in the cashew sauce and simmer for 2-3 minutes until thickened.
- Remove from heat and place lettuce cups on a plate.
- Spoon the chicken mixture into each lettuce cup and garnish with cilantro, cashews, and Sriracha.
