Burrata Salad with Tomato and Nectarine

The dressing

Instructions
- Cut the burrata cheese in half and place it open side down in the center of four plates.
- Cut nectarines into half-inch wedges and arrange them in a crescent shape on the plates.
- Cut tomatoes into half-inch wedges and place them between the nectarines.
- Dice the roasted beet and scatter it over the crescent if using.
- Add the red onion if desired.
- Scatter torn basil leaves over the salad.
- Season with salt and pepper.
- Whisk together the dressing ingredients and spoon it over the salads.
- Serve immediately.
