Burrata Salad with Tomato and Nectarine

Ingredients

The salad

  • 2 balls burrata cheese
  • 2 large ripe nectarines
  • 2 medium ripe heirloom tomatoes
  • 1 optional roasted or steamed beet
  • cup thinly sliced red onion
  • 1 handful small basil leaves
  • 1 pinch salt
  • to taste cracked pepper

The dressing

  • 3 tablespoons olive oil
  • tablespoons balsamic vinegar
  • 1 tablespoon maple syrup or honey
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. Cut the burrata cheese in half and place it open side down in the center of four plates.
  2. Cut nectarines into half-inch wedges and arrange them in a crescent shape on the plates.
  3. Cut tomatoes into half-inch wedges and place them between the nectarines.
  4. Dice the roasted beet and scatter it over the crescent if using.
  5. Add the red onion if desired.
  6. Scatter torn basil leaves over the salad.
  7. Season with salt and pepper.
  8. Whisk together the dressing ingredients and spoon it over the salads.
  9. Serve immediately.
