Instructions
- Combine the salsa ingredients in a small pot, bring to a boil, and simmer for 10-15 minutes.
- In a skillet, combine the refried beans ingredients and let boil lightly for 3-4 minutes before mashing into a paste.
- Heat another skillet and melt the butter, then crack the eggs into the pan and cook to your liking.
- Arrange the corn tortillas on plates, top each with two eggs, and divide the beans alongside.
- Sprinkle salsa, cheese, and cilantro over the top and serve warm.
