Ingredients

Salsa

  • 1 tomato diced
  • ½ bell pepper seeded and diced
  • ½ onion diced
  • ½ lime juiced
  • ½ jalapeño minced (optional)
  • cup water
  • to taste salt
  • to taste pepper

Shortcut Refried Beans

  • 1 can pinto beans (rinsed and drained)
  • 1 cup water
  • teaspoon cumin
  • teaspoon salt (to taste)
  • to taste pepper

Eggs

  • 2 teaspoons butter
  • 4 eggs
  • to taste salt
  • to taste pepper

For serving

  • 2 corn tortillas homemade or store bought
  • to taste queso fresco (Mexican cheese)
  • to taste cilantro (fresh)

Instructions

  1. Combine the salsa ingredients in a small pot, bring to a boil, and simmer for 10-15 minutes.
  2. In a skillet, combine the refried beans ingredients and let boil lightly for 3-4 minutes before mashing into a paste.
  3. Heat another skillet and melt the butter, then crack the eggs into the pan and cook to your liking.
  4. Arrange the corn tortillas on plates, top each with two eggs, and divide the beans alongside.
  5. Sprinkle salsa, cheese, and cilantro over the top and serve warm.
