Ingredients

The base

  • 4 pieces corn tortillas
  • 1 cup refried beans
  • 4 pieces fried eggs
  • 1 cup ranchero sauce

The toppings

  • 1 piece avocado, sliced
  • 1 cup pico de gallo (optional)
  • ½ cup fresh cilantro leaves
  • 1 piece jalapeño or serrano pepper, thinly sliced (optional)
  • 2 tablespoons Cotija cheese (optional)

For cooking

  • 1 tablespoon avocado oil (for brushing)
  • to taste sea salt
  • to taste freshly ground black pepper

Instructions

  1. Prepare the ranchero sauce according to the recipe.
  2. Heat a nonstick skillet over medium heat and brush with avocado oil.
  3. Cook each tortilla for about 15 seconds on each side until they puff up slightly.
  4. Fry the eggs in the skillet and season with salt and pepper.
  5. Assemble the dish by placing each tortilla on a plate, topping with refried beans and ranchero sauce, followed by a fried egg.
  6. Add more sauce and your choice of toppings like avocado, pico de gallo, cilantro, jalapeños, and Cotija cheese.
