Instructions
- Prepare the ranchero sauce according to the recipe.
- Heat a nonstick skillet over medium heat and brush with avocado oil.
- Cook each tortilla for about 15 seconds on each side until they puff up slightly.
- Fry the eggs in the skillet and season with salt and pepper.
- Assemble the dish by placing each tortilla on a plate, topping with refried beans and ranchero sauce, followed by a fried egg.
- Add more sauce and your choice of toppings like avocado, pico de gallo, cilantro, jalapeños, and Cotija cheese.
