Instructions
- Heat olive oil in a saucepan and sauté chopped onion until translucent.
- Add chili powder, cumin, and cayenne, then stir in rinsed black beans and water. Simmer for about 10 minutes.
- Mash some of the beans and cover until ready to serve.
- In a food processor, blend salsa verde, avocado, cilantro, jalapeño, garlic, and lime juice until creamy. Warm gently.
- Cook eggs to your preference (fried or scrambled).
- Warm tortillas over a flame or in a pan.
- Assemble by placing beans, avocado sauce, and eggs on tortillas. Garnish with feta, cilantro, radishes, and jalapeño. Serve with hot sauce.
