Huevos Rancheros with Avocado Salsa Verde

Ingredients

Spicy Black Beans

  • 2 cans black beans
  • 1 tablespoon olive oil
  • ½ medium red onion
  • ½ teaspoon chili powder
  • ½ teaspoon cumin powder
  • ¼ teaspoon cayenne pepper
  • 1 lime lime
  • to taste salt and pepper

Avocado Salsa Verde

  • 1 cup mild salsa verde
  • 1 ripe avocado
  • 1 big handful cilantro
  • 1 medium jalapeño
  • 1 clove garlic
  • ½ lime lime

Assembly

  • 4+ pieces corn tortillas
  • 4+ pieces eggs
  • ½ cup feta cheese
  • 1 small handful cilantro
  • 4 pieces radishes
  • ½ jalapeño jalapeño
  • to taste hot sauce

Instructions

  1. Heat olive oil in a saucepan and sauté chopped onion until translucent.
  2. Add chili powder, cumin, and cayenne, then stir in rinsed black beans and water. Simmer for about 10 minutes.
  3. Mash some of the beans and cover until ready to serve.
  4. In a food processor, blend salsa verde, avocado, cilantro, jalapeño, garlic, and lime juice until creamy. Warm gently.
  5. Cook eggs to your preference (fried or scrambled).
  6. Warm tortillas over a flame or in a pan.
  7. Assemble by placing beans, avocado sauce, and eggs on tortillas. Garnish with feta, cilantro, radishes, and jalapeño. Serve with hot sauce.
