Ingredients

The base

  • 2 pieces Flour tortillas
  • 2 pieces Eggs (or scrambled egg whites)

The filling

  • 1 can Black beans (rinsed and drained, low sodium)
  • ½ small Onion, diced
  • to taste Cumin
  • 1 cup Diced tomatoes
  • 1 cup Shredded cheese (Colby and Pepperjack)
  • 1 medium Avocado, diced
  • ¼ cup Fresh cilantro, chopped
  • 1 tablespoon Fresh lime juice

Instructions

  1. Heat the flour tortillas.
  2. In a small saucepan, warm the black beans with the diced onion and cumin.
  3. Fry the eggs or scramble the egg whites.
  4. Place the cooked eggs on the warm flour tortillas.
  5. Top the eggs with the warmed black beans.
  6. Add diced tomatoes, shredded cheese, diced avocado, chopped cilantro, and lime juice on top.
